  • 3 c. shredded cheese mix (colby, monterrey jack, and American in equal parts
  • 2 16 oz. MFNM Foods Red or Green Sauce (heated in medium saucepan)
  • 1 browned ground sirloin (seasoned w/ ½ t. salt, ¼ t cumin seed, 1 clove garlic, minced)
  • ½ medium onion, chopped
  • 4 fried eggs, optional

InstructionsInstructions  Preheat oven to 300 degrees. Soften tortillas, one at a time, in oil and drain on paper towels. Dip a tortilla in MFNM Foods Red or Green Chile Sauce and place on warmed serving plate.

Sprinkle with approximately 1-2 t. chopped onion, top with 2 T. shredded cheese mixture, 2 T. ground sirloin mixture, and 2-3 T. MFNM Foods Rojo Caliente Red Chile Salsa. Repeat this process 1-2 more times, for desired serving size (2-3 tortillas high).

Place plate in oven to melt cheese. While cheese is melting, fry one egg to desired doneness. Remove enchilada plate from oven and top with fried egg. Complete by pouring 2-3 T. MFNM Foods Sauce and 2 T. cheese mixture. Place back in oven just until cheese melts.

Remove from oven and garnish with chopped, green leafy lettuce and chopped fresh tomatoes. Serve with cooked, whole or pinto beans.
