DescriptionDescription  Traditional Stacked New Mexico Enchiladas
InstructionsInstructions  Preheat oven to 300 degrees. Soften tortillas, one at a time, in oil and drain on paper towels. Dip a tortilla in MFNM Foods Red or Green Chile Sauce and place on warmed serving plate. Sprinkle with approximately 1-2 t. chopped onion, top with 2 T. shredded cheese mixture and 2-3 T. MFNM Foods Red or Green Chile Sauce. Repeat this process 1-2 more times, for desired serving size (2-3 tortillas high). Place plate in oven to melt cheese. While cheese is melting, fry one egg to desired doneness. Remove enchilada plate from oven and top with fried egg. Complete by pouring 2-3 T. MFNM Foods Sauce and 2 T. cheese mixture. Place back in oven just until cheese melts. Remove from oven and garnish with chopped green leafy lettuce and chopped fresh tomatoes. These are delicious served with cooked, whole pinto beans or refried beans. Optional serving suggestions: These authentic, traditional New Mexico enchiladas may also be layered with either cooked, chopped chicken, or browned ground beef. You can also top with sour cream. Yield: 4-6 servings (depending upon serving size)
